What a wonderful story, I too am going vegan. Currently the only animal protein I am consuming is fish from the ocean. Why? Because I spent almost $1000.00 dollars on it and just can't bring myself to just through it away. I have not eaten and other animal protein for about a month now. As soon as the fish is gone, I will go completely vegan. I don't think I ever lived to eat, it was not like that but I wasn't caring what I was eating as long as it was considered clean. I have been researching the affects of nutrition on our bodies and many of the disease we suffer from are not hereditary, but learned behaviors. So I have been unlearning them. I also started growing and selling microgreens because they are more nutrient dense than the grown plants. I am really trying to give my body what it needs in order to reverse type II diabetes, high cholesterol and high blood pressure. I will let you all know how it goes in about six months. Other than that, I will be ordering your recipe book because I need it to find new and different ways to prepare these vegetables. I believe you hit the nail right on the head with Bereisheet 129 because after the flood the most High told man to start eating animals and that is when the lifespan of man began to drop rapidly. Because mankind was so sinful, the Most High didn't want us living forever.
