I got fresh apples from the mountains of NC last week. So I decided to make a diabetic friendly Apple Cobbler
the crust:
1 cup all-purpose flour
1 cup Splenda brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
5 Tablespoons butter , melted
ground cinnamon for topping
Mix with apples
6 medium apples (Granny Smith, Golden Delicious, or other good baking apple), peeled and cut into chunks ¼ inch thick
1 cup water
1/3 cup Splenda brown sugar , packed
1 Tablespoon cornstarch
1 Tablespoon lemon juice or lime
1 teaspoon ground cinnamon
Bake on 400

My niece just started high school. I made this to help her with time and stress management. Hope it blesses someone else facing similar challenges.

An activity that dropped into my heart. I did this with my 6 year old nephew. It's great for older children too. Since it is a bit lengthy, this activity can be done as a two day or even whole week activity. Please feel free to use
